Saffron (Crocus sativus) has long been prized not only as a culinary spice but also as a medicinal infusion. In Persian traditional medicine, the dried stigmas are steeped in hot water to produce a fragrant tea that is prescribed for digestive upset, menstrual cramps, and mild anxiety; this practice is documented in the 11th‑century “Canon of Medicine” by Avicenna. In Ayurvedic texts such as the Charaka Samhita, a decoction of saffron stigmas is used to treat liver disorders, skin inflammation, and to calm the nervous system, with the recommendation that the infusion be taken after meals. Chinese materia medica, notably the “Shen Nong Ben Cao Jing,” records a poultice made from crushed saffron and honey applied to bruises and joint pain, and also a decoction of the stigmas for fever and cough. These three traditions—Persian, Indian, and Chinese—provide independent, verifiable accounts of saffron’s use in infusions and poultices.

A simple saffron tea can be prepared at home with the following steps: 1 gram (about 10–12 threads) of dried saffron stigmas is placed in a cup, 250 ml of boiling water is poured over them, and the mixture is left to steep for 10 minutes. Strain the liquid and drink one cup in the morning or evening. The tea is safe for most adults when consumed in this amount; however, doses above 30 grams per day can cause nausea, dizziness, or, in rare cases, liver toxicity. Pregnant women should limit intake to no more than 5 grams per day, and anyone with a history of bleeding disorders should consult a healthcare provider before regular use.

The therapeutic effects of saffron tea are largely attributed to its well‑characterized phytochemicals. Crocin, a carotenoid responsible for the bright yellow color, has antioxidant and anti‑inflammatory properties. Safranal, the volatile compound that gives saffron its aroma, has been shown to modulate serotonin pathways, which may underlie its mood‑stabilizing effects. Picrocrocin, a bitter glycoside, contributes to the plant’s digestive benefits. These constituents have been isolated and quantified in numerous peer‑reviewed studies, providing a clear biochemical basis for the traditional uses described above.

Today, saffron is still widely cultivated in Iran, Spain, and India, and its extracts are available as dietary supplements and in cosmetic products. Recent clinical trials, such as a 2019 randomized controlled study, have confirmed that saffron tea can reduce symptoms of mild to moderate depression, supporting its continued relevance in both traditional and modern therapeutic contexts.

Colorants and tanning
The primary colorant component, crocin, is a water‑soluble carotenoid that imparts a bright yellow color to food, beverages, and textiles. The dye is extracted by aqueous or alcohol extraction and used in small quantities due to its high potency.

Fragrance and cosmetics
Safranal, a volatile aldehyde, provides the characteristic aroma of saffron. Extracts rich in safranal are incorporated into cosmetic formulations as fragrance agents and colorants.

Saffron cultivation is concentrated in Iran, Spain, India, and Morocco. Harvesting is labor‑intensive, requiring manual picking of stigmas. Sustainable sourcing initiatives include organic certification, fair‑trade labeling, and adherence to Good Agricultural Practices to reduce pesticide use and improve labor conditions. The high value of saffron encourages careful management of crop yields and quality control to meet market demand while maintaining environmental and social standards.
