Fresh, frozen, dried, and canned whole berries; juice; sweetened dried cranberries; sauce; puree; cranberry concentrates and extracts; small amounts of powdered fruit and pomace flour.

Industrial and craft applications:
Whole berries are used in decorations, garlands, and arts-and-crafts projects. Anthocyanin-rich extracts are commercial natural colorants for foods and beverages.

Food and beverages (non-medicinal):
Products are marketed as juice (often sweetened), sauce, jellied cranberry sauce, sweetened dried cranberries, frozen whole berries for baking and sauces, puree for pie filling, and concentrates for flavor blending. Typical processing steps include sorting, cleaning, freezing or thermal blanching, canning with sugar/syrup, and hot-fill packaging for shelf stability. Concentrates may be clarified by filtration or centrifugation and formulated to standard °Brix levels.

Colorants and tanning:
Skin anthocyanins (e.g., cyanidin-3-galactoside) are used as natural red/purple colorants in beverages, candies, and baked goods; formulations and heat treatment influence color stability. Cranberry tannins are not reported as commercial tanning agents.

Properties relevant to use:
Berries are low in pectin but sufficiently acidic (pH around 2.5–3.5) to resist microbial growth under proper thermal processing; °Brix, titratable acidity, and pH are the primary quality and stability parameters used by processors.

Standards and regulation:
In the United States, USDA Grade Standards exist for fresh, frozen, canned, and dried cranberries (including moisture limits for dried fruit). Juice and concentrate specifications commonly target standard °Brix levels and acidity ranges; national food laws (e.g., the U.S. FDA Food Code and associated additive regulations) govern processing, packaging, and labeling of cranberry food products.

Sustainability and sourcing:
Cranberries are cultivated on beds with cyclic flooding for harvest, posing water-use, habitat, and nutrient-management concerns. Regional initiatives (e.g., state-level cooperative extension guidance and buyer codes of conduct) address water use, pest management, and worker and environmental conditions. Water recycling and nutrient budgeting are commonly practiced on modern farms to mitigate impacts.
