In traditional Chinese medicine, the leaves of Diospyros kaki are boiled to produce a decoction that is drunk to relieve cough and soothe a sore throat (Li et al., 2015). The fruit itself is also made into a decoction or infusion to treat constipation, with the dried fruit simmered for 30 minutes before consumption (Li et al., 2015). In Korea, dried persimmon leaves are steeped in hot water to make a mild tea that is used for cough and phlegm; the leaves are steeped for 5–10 minutes and the tea is taken twice daily (Kim et al., 2018). In Japan, persimmon leaf tea is a common home remedy for sore throat and mild respiratory irritation; the leaves are boiled for 10 minutes and the resulting infusion is cooled before drinking (Sato et al., 2019). These preparations are all based on infusions or decoctions of the leaves or fruit, and no poultice or maceration of bark is reported in the literature.

A simple, safe recipe for a persimmon leaf tea is as follows: take 5 g of dried Diospyros kaki leaves, place them in a teapot, and pour 250 ml of water heated to 80 °C. Let the leaves steep for 5 minutes, then strain and drink. This tea can be taken up to two cups per day. Pregnant women should avoid more than one cup, as the leaves contain modest amounts of tannins that may stimulate uterine contractions. The tea is generally well tolerated in adults and children over 6 years of age.

The therapeutic effects of persimmon leaf preparations are largely attributed to flavonoids such as quercetin and kaempferol, which have anti‑inflammatory and antioxidant properties. Tannins, particularly persimmon tannin, contribute to the astringent action that helps relieve cough and phlegm. Small amounts of triterpenoids and vitamin C are also present and may support mucosal health.

Modern research has confirmed the anti‑inflammatory activity of persimmon leaf extracts in vitro, and commercial dietary supplements containing standardized leaf extracts are now available in health‑food stores. The continued use of persimmon leaf tea in East Asian households demonstrates that this traditional remedy remains relevant today.

- Dried slices or whole fruits used as snack ingredients, in granola or trail mixes, and as decorative toppings for desserts.
- Persimmon juice, vinegar and wine are incorporated into culinary preparations (e.g., glazes, marinades, sparkling drinks) without health claims.

Colorants and tanning:
- Carotenoid pigments (β‑cryptoxanthin, β‑carotene) extracted from the fruit are used as natural food colorants (E160a).
- Hydrolyzable tannins from bark and leaves provide a dark brown tanning solution for protein‑based leathers and have been formulated into industrial tannin extracts.

Wood and fiber:
- Persimmon timber exhibits high lignin content (>25 % of dry weight) and low tangential shrinkage, giving dimensional stability suitable for furniture, veneer and turned objects.
- The wood’s fine, interlocked grain also makes it desirable for musical‑instrument soundboards.

Fragrance and cosmetics:
- Seed oil, pressed from the kernels, contains a high proportion of linoleic acid (≈55 %) and vitamin E, providing emollient and antioxidant properties; it is incorporated into skin‑care and hair‑care cosmetic formulations.

Properties relevant to use:
- Fruit pulp is rich in soluble sugars (≈15–20 % dry weight) and pectin, facilitating processing into purees and dried products.
- Bark tannins are predominantly gallotannins with molecular weights suitable for leather‑tanning pH ranges.
- Seed oil has an iodine value of 115–125 g I₂ 100 g⁻¹ and a saponification value of 190–200 mg KOH g⁻¹, indicating high unsaturation and suitability for soap and cosmetic applications.
