Colorants and tanning:
Persicaria tinctoria is cultivated as a source of natural indigo dye. The aerial plant parts, especially leaves, contain indican (indoxyl-β-D-glucoside), which is enzymatically hydrolyzed to indoxyl and then oxidized to indigotin (indigo). This plant–indigo system is used for textile dyeing and printing.

Food and beverages (non-medicinal):
The seeds are reported as an edible resource in some parts of East Asia, and are processed into flour or meal; the species is also listed as an oilseed in regional agronomic records.

Fragrance and cosmetics:
The dried aerial parts and seeds have been used as a source of fragrance compounds in traditional applications; extracts may serve as perfume materials.

Scientific/model-organism use:
P. tinctoria is a model organism in studies of flavonoid and anthocyanin biosynthesis. It is employed for comparative and functional analyses of genes and enzymes involved in indigo formation, and as a reference for related taxa.

Properties relevant to use:
Indican content, coupled with enzymatic β‑glucosidase activity and the facile aerial oxidation of indoxyl to indigotin, underpins its use as a natural blue dye. Seed flour consists of typical Polygonaceae reserve carbohydrates suitable for food processing; seed oil composition (elevated linolenic acid) influences drying behavior and storage stability.

Sustainability and sourcing:
Major producing regions include China and Japan. Production generally involves manual leaf harvesting and post-harvest hydrolysis of the biomass before oxidation to recover indigo. Seed harvest contributes to multi-purpose utilization (flour/oil).
