Tarragon, also known as estragon, is a perennial herb in the Asteraceae family that is found in the wild across Eurasia and North America. It is cultivated for both culinary and medicinal purposes, with the French variety being the most commonly used in cooking. Tarragon grows up to 5 feet tall and has slender branches with lanceolate leaves. It produces small yellow or greenish-yellow flowers, but some plants are sterile and do not produce seeds. Tarragon is propagated through root division and is not grown from seeds. It is used in various cuisines, such as French, Persian, and Georgian, and is a key ingredient in dishes like Béarnaise sauce and Chakapuli. Tarragon contains compounds like estragole, which has been deemed safe for consumption by the European Union. Its oil is mainly composed of phenylpropanoids and terpenes. Tarragon is also known as "dragon" in Swedish and Dutch, and its species name, dracunculus, means "little dragon."
