Common products:
Sour cherry fruit is harvested fresh, frozen, canned, dried or processed into juice concentrates and syrups. It is a primary ingredient in pies, tarts, jams, jellies, chutneys and dessert garnishes. The kernels are pressed to obtain a clear, pale oil used in cosmetic formulations.

Industrial and craft applications:
Kernels yield a fatty‑acid‑rich oil (INCI: Prunus Cerasus Kernel Oil) employed as a skin‑conditioning emollient in lotions and creams. Fruit pits (stones) are ground to a fine powder and incorporated into facial scrubs as a biodegradable abrasive. The wood of mature trees, limited in size, is used by turners for small items such as bowls, handles and decorative inlay because of its fine grain and light reddish hue.

Food and beverages (non‑medicinal):
Sour cherry juice and concentrates are used in carbonated drinks, fruit‑flavored beverages and as a flavor base for alcoholic spirits (e.g., kirsch, sour‑cherry liqueurs). The pulp appears in bakery fillings, confectionery chews and gummy candies. Freeze‑dried pieces serve as ingredients in breakfast cereals and snack mixes. Juice can be fermented to produce sour‑cherry wine or brandy.

Colorants and tanning:
Anthocyanins extracted from sour‑cherry skins are marketed as the natural food colourant E163, providing a red hue for confectionery, beverages and dairy products. These pigments retain colour in acidic media and meet Codex specifications for natural food colours. Bark and leaves contain gallotannins historically employed as a leather‑tanning agent.

Wood and fiber:
Sour‑cherry wood is a light‑to‑medium hardwood valued for its fine, interlocked grain and reddish colour. It is used for small‑scale woodcraft, turnery and ornamental carving; no large‑scale timber or pulp production is reported.

Fragrance and cosmetics:
Fruit extracts containing volatiles such as benzaldehyde and linalool are incorporated into perfumes and personal‑care products for fragrance. Kernel oil, listed in the International Nomenclature of Cosmetic Ingredients (INCI), contributes emollient properties and is used in moisturizers and hair‑care formulations.

Properties relevant to use:
The kernel oil contains ~50 % linoleic acid, ~30 % oleic acid and ~6 % palmitic acid, giving a low iodine value and good oxidative stability.
