The fruit of Stenocereus griseus is consumed fresh and processed into beverages, sweets, and frozen desserts. Pulp and puree are used as flavor bases and culinary ingredients. Seeds, where present, are also eaten as part of the fruit or are processed into edible seed oil with typical cactus-seed fatty acid profiles (predominantly linoleic acid with palmitic and oleic acids present).

Colorants and tanning:
The fruit contains anthocyanins, yielding a reddish-purple natural food colorant suitable for pH-stable foods and low-acid systems; dyeability on protein fibers is typical of anthocyanin-rich extracts and depends on mordanting and pH, though specific species-dye data are not reported.
