Prunus mume, known as ume in Japan, liú in China, and umek in Korea, has a long history of use as an infusion for respiratory and digestive ailments. In traditional Chinese medicine the dried fruit is brewed as a tea to relieve cough, sore throat, and to promote diuresis; the bark is decocted for chronic cough and the leaves are macerated for their mild diuretic effect (Chinese Pharmacopoeia, 2020). Japanese practitioners have long prepared ume‑cha, a mild tea made from dried fruit, to soothe the stomach, aid digestion, and reduce inflammation of the throat (Yamada, 2018). Korean herbalists similarly use ume fruit decoctions to treat cough, bronchitis, and to support urinary function, often combining the fruit with ginger or licorice for added benefit (Korean Journal of Ethnopharmacology, 2019). Across these three cultures, the common theme is the use of the fruit in an infusion or decoction, with occasional use of bark or leaves in maceration or poultice form for cough and diuretic purposes.

A simple, safe recipe for a mild ume tea is as follows: take 5 g of dried ume fruit (about one small fruit), place it in a cup, pour 250 ml of hot water (80–90 °C), and steep for 5–10 minutes. Strain and enjoy warm. This preparation delivers the fruit’s natural sugars and phenolics while minimizing the bitter alkaloids that can be present in raw fruit. The tea is generally considered safe for most adults; however, because ume has diuretic properties, people with kidney disease or those taking diuretic medications should use it cautiously. Pregnant women are advised to consult a healthcare provider before regular consumption, as the fruit’s high vitamin C content can be beneficial but may also stimulate uterine contractions in high doses.

The therapeutic effects of ume tea are supported by several well‑documented phytochemicals. The fruit contains amygdalin and its related cyanogenic glycoside prunasin, which are hydrolyzed to produce small amounts of hydrogen cyanide and benzaldehyde; these compounds are thought to contribute to the mild antimicrobial activity. Phenolic acids such as chlorogenic acid, along with flavonoids like quercetin, catechin, and rutin, provide antioxidant and anti‑inflammatory properties. The presence of vitamin C and trace minerals further supports the traditional use of ume for boosting immunity and promoting digestive health.

Modern research continues to explore the anti‑inflammatory, antioxidant, and potential anti‑cancer effects of Prunus mume extracts, and the fruit remains commercially available in Asian grocery stores and specialty health‑food shops as ume tea, ume‑based syrups, and pickled ume products. Its enduring popularity in East Asian traditional medicine and its growing presence in contemporary wellness markets underscore the plant’s lasting relevance.

General Uses Top

Suggest a correction!

Common products:
• Umeshu (Japanese liqueur): steeped in distilled spirits with sugar; product class is fruit liqueur. • Umeboshi (salted plum): whole fruit preserved in salt or salt + Perilla; product class is brined, fermented fruit condiment. • Ume vinegar (umezu): brine/byproduct used as acidulant. • Candied ume, jams, purées, and fruit pastes: sweetened fruit products for confectionery and bakery fillings. • Flavors and colorants: water or ethanol extracts of fruit and flowers used as natural flavorings and orange-to-red colorants in foods; class is “natural flavoring” or “color” under EU Reg. 1334/2008 and FDA 21 CFR 101.22. • Processing: pectin, citric acid, or lactic acid may be added to adjust texture or acidity during paste/preserve production (industry practice, product-level disclosures).

Industrial and craft applications:
• Wood: small craft items and specialty handles; hardness and fine grain suitable for turnery and inlay work; timber volume is minor relative to fruit use.

Food and beverages (non-medicinal):
• Core uses are as above—ume as a food ingredient and processing adjunct (umezu) across Japanese and broader East Asian cuisines; these uses are documented in national food standards (JAS, JFSL/JAHP) and national pharmacopeias in food contexts (e.g., Kampo food classification). • Flavors: benzaldehyde from apricot kernels (Prunus armeniaca) is used in confectionery and beverages; Prunus mume itself is documented as a flavor ingredient primarily via fruit and flower extracts.

Colorants and tanning:
• No documented tannin industry use. No specific, species-level studies confirming natural dyes from P. mume are widely referenced; any use is outside conventional documented practice.

Wood and fiber:
• Fiber: not used industrially for bast fiber or pulp.

Fragrance and cosmetics:
• Fragrance/cosmetics: fruit and flower extracts occur in perfumes and scented cosmetics as natural flavor/fragrance materials; they are included in IFRA standards and FEMA GRAS lists for apricot kernels and related Prunus-derived materials. Some products may be citrus-scented or bitter-almond aromatic due to benzaldehyde-like constituents in kernels; separate material usage in the fragrance chain is from apricot kernels, not P. mume fruit.

Properties relevant to use:
• High acidity and salt-driven preservation enable umeboshi stability without refrigeration. • Sugars and fruit acids support liqueur extraction and confectionery applications. • Fruit/flower extracts contribute characteristic aroma and color for natural flavor and coloring applications; standards rely on safety evaluations (JECFA, FDA, EFSA) for flavoring materials and on national food-color labeling requirements.

Standards and regulation:
• Flavor and color uses are governed by EU Reg. 1334/2008 (flavorings) and Reg. 1333/2008 (food additives); in the U.S., natural flavors/colorants are subject to 21 CFR 101.22; apricot-kernel-derived flavoring materials are FEMA GRAS (FEMA 2008) and follow IFRA standards for fragrance use. • JAS and JAHP (JFSL) govern umeshu and umeboshi standards (e.g., minimum alcohol and salt thresholds; ingredient labeling).

Sustainability and sourcing:
• Most fruit is cultivated in Japan and China; wild harvesting is minor. Salt use in umeboshi requires salinity management and wastewater treatment to meet local environmental standards (e.g., Japan’s Water Pollution Control Act). Pest management and orchard diversification in major producing regions help reduce monoculture risks and maintain yield stability.
