The primary commercial product from Mentha × piperita is peppermint essential oil (EO) distilled from fresh or partially dried herb. Ethanol extracts (tinctures, oleoresins) and CO2 extracts are also produced for flavor and fragrance applications. Menthol crystals are isolated from the EO by chilling and filtration and sold as a fragrance and flavor ingredient. Less common forms include dried leaf and comminuted herb used directly as a flavoring material in processed foods. Main constituents are menthol, menthone, menthyl acetate, limonene, and 1,8-cineole (EUR Ph).
Industrial and craft applications:
- Fragrance and flavor uses: the EO and menthol function as top notes and cooling agents in perfumes, soaps, detergents, and household cleaners. They are used to flavor beverages, confectionery, ice cream, desserts, chewing gum, toothpaste and oral care blends, and to aroma-correct or mask off-notes in baked goods and dairy (Flavor & Extract Manufacturers Association; Burdock’s Fenaroli).
- Adhesives, coatings, and functional polymers: resin-soluble fractions of the EO are evaluated as adhesion promoters and resin modifiers for thermosetting systems. Menthol is used to impart temporary plasticity or modify surface gloss in coatings, though dose limits and compatibility must be controlled.
Food and beverages (non-medicinal):
Peppermint EO and menthol are used as natural flavors in alcoholic beverages (liqueurs, spirits), carbonated soft drinks, confectionery and chocolate, bakery fillings and icings, dairy (mints, ice cream), and savory snacks. Typical use levels are kept low to avoid overcoolant sensory effects. The dried leaf can be used as a spice/seasoning in culinary blends.
