Ethnobotanical Uses
Among Chinese households, the whole grain of Setaria italica is simmered as a light decoction or grain tea—often called millet water—used for daily nourishment and as a soothing, gentle drink (Modern Practical Millet Technology, 2018). Across northern India and the Punjab region, equivalent grain infusions and thin porridges (kheer‑like preparations) are taken as regular foods and beverages, valued for their lightness and energy (Ethnobotany of India, 2016). In eastern Africa, particularly in the Ethiopia–Eritrea corridor, foxtail millet is similarly processed by brief decoction or infusion of the grain or the germinated malts to make non‑alcoholic “teas” and porridges served warm (Ethnobotany of Ethiopia and Eritrea, 1997).
One practical recipe: Coarse gruel water. Rinse 60 g whole or lightly milled foxtail millet, add 1 liter cold water, bring to a boil, reduce to a simmer and cook 30–40 minutes, then strain and drink warm.
