Seeds are harvested as a pseudocereal and processed into flour. Hulls are removed during cleaning and may be used as compost or for packing. Seed oil can be cold-pressed for edible use.

Buckwheat flour is used in soba noodles, pancakes, bread, pasta, crackers, and breakfast porridge.
