The ovoid-cylindrical tuberous roots of some European orchid species, including this taxon, have been used historically as the source of salep, a starchy flour/mucilage employed as a thickening agent in foods such as ice cream and confectionery. The product is obtained by cleaning, boiling, and drying the tubers, followed by milling into flour. The relevant functional properties of salep are its high amylose/amylopectin ratio and characteristic galactomannan-type mucilage that imparts high viscosity and freeze–thaw stability to hydrocolloid systems. These properties are the basis of its use in stabilizing and texturizing foods, especially dairy desserts.

In the European Union, the tuber-derived salep is regulated as a novel food or food ingredient under Regulation (EU) 2015/2283, requiring authorization and specifications to ensure food safety, including microbial limits and processing standards.
