Amaranthus viridis, also known as slender amaranth or green amaranth, is a widely distributed annual herb in the Amaranthaceae family. It has an upright stem, ovate leaves, and small green flowers with 3 stamens. The plant is commonly used as a vegetable in many parts of the world, including India, Africa, and Australia. It is also used in traditional Ayurvedic medicine and is known for its high protein and lysine content. Other related plants, such as Amaranthus blitum and Amaranthus retroflexus, are also edible and used in various cuisines.
