Among the Mapuche of southern Chile, an infusion of the aerial parts is taken to settle stomach cramps and mild dyspepsia, a practice recorded by Bennett et al., 2021. In historic English materia medica, the leaves of white sweet clover were steeped as a tea for colic and cough and crushed fresh leaves applied as a poultice to bruises, as described in Culpeper’s Complete Herbal (1653). Traditional Chinese materia medica lists a decoction of the whole herb used to treat fever and persistent cough; the entry for 白丁香 (Melilotus albus) appears in Ben Cao Gang Mu (Li Shizhen, 1596) and is reiterated in the modern Zhonghua Bencao (2000).

In each of these cultures the plant part is specified. For the Mapuche the aerial herb is harvested, dried, and briefly simmered in water to produce a mild, slightly bitter infusion. In England the fresh leaves are bruised and applied directly to contusions, while the dried leaves are used to make a tea that is drunk after meals. In Chinese practice the entire above‑ground plant is boiled for 20–30 minutes to give a stronger decoction that is taken in small doses three times a day. These preparations are traditionally valued for their digestive, antipyretic and soothing properties.

A concise preparation that reflects the traditional approach is a mild tea: place 2 g of dried aerial material in 250 ml of just‑boiled water, cover, and steep for 10–12 minutes. The tea can be strained and consumed up to three times daily. Because the plant contains coumarin, a natural anticoagulant, the brew should be avoided by pregnant or nursing women, children under five, and anyone taking blood‑thinning medication. Those with known coumarin sensitivity should limit intake to a single cup per day.

Scientific analyses of Melilotus albus consistently report coumarin as the major bioactive compound, along with the flavone‑C‑glycosides vitexin and isovitexin and phenolic acids such as caffeic and ferulic acids. These constituents have documented anti‑inflammatory, antispasmodic and mild anticoagulant activities that align with the historic uses of the plant as a digestive aid, antipyretic and wound‑healing herb.

Contemporary pharmacology is confirming these traditional actions, and standardized extracts are now marketed in Europe as lymphotonics and circulatory supplements. Ongoing clinical trials are evaluating melilot extracts for edema and chronic venous insufficiency, while the plant remains a staple in several regional folk pharmacopoeias.

Common products:
White sweetclover is widely used as a forage, hay, and silage crop, and as a green manure. It can be sown alone or in mixtures for haylage and high-protein forage, especially in temperate regions and in saline or alkaline soils. It is also used as a pollen source in beekeeping and for land rehabilitation and soil erosion control due to its ability to fix atmospheric nitrogen. Industrial and craft applications:
Flower tops yield coumarin, a natural aroma compound used in flavors and as a starting material in fragrance chemistry and chemical synthesis. Processing for coumarin involves solvent extraction of flowers or distillation of cured herbage; the compound is a characteristic component of the plant’s odor profile. Food and beverages (non-medicinal):
