Cirsium oleraceum, also known as cabbage thistle or Siberian thistle, is a species of thistle found in central and eastern Europe and Asia. It grows in wet lowland soils and can reach a height of 1.5 meters. The leaves are broad and ovoid with a slightly spiny edge, and the flowers are pale yellow with a hint of pink. In some cultures, the young stems and leaves of this plant are used in salads and cultivated for food. Its name, oleraceum, comes from the Latin word for "vegetable" or "herbal."
