Crithmum is a genus of flowering plants in the carrot family, with the sole species being Crithmum maritimum, also known as rock samphire, sea fennel, or samphire. It is an edible wild plant found on coastlines in Europe, Macaronesia, West Asia, and North Africa. In the past, it was collected from cliffs and shipped to London for sale. It is now cultivated in gardens in England, but uprooting wild plants is illegal. The reclaimed land of Samphire Hoe in Dover is named after this plant. It has a hot and spicy taste and can be pickled or used fresh in salads. It is a traditional food in Italy, Croatia, Greece, and Montenegro. It is also rich in antioxidants and has nutritional value.
