Pueraria tuberosa, also known as kudzu, is a climbing vine with large tuberous roots that is native to India, Pakistan, and Nepal. Its tubers are round and starchy, with a mild sweetness, and its leaves are trifoliate and hairless. The flowers are blue or purplish-blue, and the fruit pods are linear with reddish-brown hair. Unfortunately, kudzu is facing extinction in the wild due to illegal harvesting of its tubers for use in pharmaceutical and Ayurvedic products. The red variety of kudzu tuber can fetch a high price on the black market, leading to over-harvesting and endangering the plant's survival.
