Rumex bucephalophorus, also known as horned, red, or ruby dock, is an annual herbaceous plant native to the Mediterranean Basin. It is part of the Polygonaceae family and was first described by Linnaeus in 1753. It is commonly found in coastal regions and is known for its thin stems and varying leaf shapes. The flowers of R. bucephalophorus are red and bloom between December and May. It is mostly distributed in North America and Europe, but thrives in sandy and rocky habitats near the sea. This plant is unique in that it has 8 different subspecies and is edible, although its high oxalic acid content can be dangerous in large amounts.
