Amaranthus graecizans, also known as the Mediterranean amaranth or short-tepalled pigweed, is an annual herb in the Amaranthaceae family. It is native to Africa, southern Europe, East Asia, and Central Asia, but has also been naturalized in North America. It grows up to 50 cm tall and has yellow flowers with small black seeds. It can be found in warm temperate zones, often in disturbed areas near human and livestock settlements. The leaves of this plant are edible and commonly used as a vegetable in Africa and the Middle East. The seeds are also edible and can be eaten raw or cooked. However, it is important to note that this plant can accumulate nitrates in its leaves when grown in nitrogen-rich soils, which can be harmful if consumed in large quantities.
