Centaurea sulphurea, also known as the Sicilian star thistle or sulphur star knapweed, is an annual herb in the Asteraceae family. It is native to southwestern Europe but has been introduced to other continents. It is closely related to Centaurea solstitialis, a highly invasive thistle in California, but has only established a few populations in the state since its introduction in the 1800s.
