Allium tricoccum, also known as ramp, wild leek, or wild garlic, is a North American species of wild onion or garlic found in eastern Canada and the eastern United States. It is often confused with the similar Allium ursinum, which is native to Europe and Asia. This perennial plant has an ovoid-conical shaped bulb and produces broad, flat, light green leaves with purple or burgundy tints. It blooms in June or July with white, cream, or yellowish flowers arranged in an umbel. There are two recognized varieties of Allium tricoccum, with the main differences being size and color of the leaves and flowers. Ramps are considered a rare delicacy in Canada and are protected under Quebec legislation. In the United States, they are popular in the cuisines of the rural uplands and are celebrated with festivals and events. Ramps have a strong garlic and onion flavor and can be used in a variety of dishes. They also have a long history of medicinal use by Native American tribes.
