The young leaves and shoots of Sium latifolium are used as a vegetable in parts of Northern and Eastern Europe, typically boiled or cooked similarly to spinach. Historical records from regions like Scandinavia and Russia document its consumption as a famine food or locally gathered potherb. Preparation methods include boiling with a change of water to reduce potential bitterness, and some traditions preserve the shoots by pickling or fermenting. As with many Apiaceae, all parts contain photosensitizing furanocoumarins; edible use requires proper identification and safe preparation to minimize risks, as documented in regional ethnobotanical literature.

Sustainability and sourcing:
This robust wetland plant is generally considered common within its Eurasian range and is categorized as Least Concern in conservation assessments.
