The hips (mature fruits) of Rosa mollis are edible. The fleshy pericarp can be processed into jams, jellies, and syrups, often after the first frost when acidity and astringency decrease and the pulp softens. Hips are a source of ascorbic acid and pectic substances, which support gel formation in preserves; the high pectin content of the hip tissue can contribute to setting in cooked products. The small achenes are typically removed as in other rose hips. In some regions, hips are collected for direct consumption after frost and for culinary processing.
