Leaves, shoots, and seed pods are consumed as a pot herb or salad green; tender leaves and flowers are used as garnishes. The foliage contains mucilaginous polysaccharides that thicken soups and stews; the mucilage is heat-stable and imparts a slippery texture. Young seed pods may be eaten cooked; mature seeds can be roasted as a snack. Flavor is mild and vegetal.
Colorants and tanning:
Flowers provide a purple anthocyanin-based natural colorant suitable for mildly acidic foods and non-protein substrates. There are no reports of significant tannin content, and the species is not documented as a source for tanning materials.
Properties relevant to use:
Anionic mucilage polysaccharides (galacturonic acid–rich, with rhamnose, galactose, arabinose) confer water-binding, thickening, and stabilizing properties. Flowers contain anthocyanins (delphinidin/malvidin derivatives) giving pH-dependent blue–purple hues. Whole-plant tissue is low in lignin, making the herb soft and non-fibrous for culinary preparation.
