Saigon cinnamon, also known as Vietnamese cinnamon, is an evergreen tree native to Southeast Asia. It is closely related to cassia and has a high essential oil content and cinnamaldehyde, making it more expensive than other cinnamon species. It contains the second highest amount of coumarin, a compound that can be toxic to the liver and kidneys. Saigon cinnamon is primarily produced in Vietnam and is used in both domestic and international markets. It is commonly used in Vietnamese cuisine, particularly in the popular noodle soup dish, phở. Despite its name, Saigon cinnamon is not produced in the city of Saigon, but in the Central Highlands region of Vietnam.
