Plantago coronopus, also known as buck's-horn plantain, is a flowering plant in the Plantaginaceae family. It has narrow, toothed or divided leaves and produces dense spikes of small, white flowers. It is native to Eurasia and North Africa, but can also be found in other parts of the world as an introduced species. In the US and Italy, it is commonly known as minutina or erba stella. It is often grown as a leaf vegetable, particularly for specialty markets, and has recently gained popularity as a winter crop for farmers in colder climates. It is typically grown in unheated hightunnels.
