Thymus herba-barona, also known as caraway thyme, is a type of thyme found in Corsica, Sardinia, and Majorca. It has a strong scent similar to caraway and can be used as a substitute in recipes. This creeping, woody perennial grows up to 25 cm high and has dark green, hairy leaves and pink flowers. It is easy to grow in average soil with sunlight and light watering. Caraway thyme is commonly used in cooking, particularly in England where it was used to season barons of beef. It also has various medicinal and disinfectant uses, and its essential oil has been found to have antimicrobial properties. While it is difficult to grow from seed, it can be purchased as young plants for cultivation in gardens around the world.
