Lathyrus clymenum, also known as Spanish vetchling, is a flowering plant native to the Mediterranean region. Its seeds are used to make a traditional Greek dish called fava santorinis, which is made on the island of Santorini and has recently been given a Protected Designation of Origin by the European Union. The plant is well-suited to the unique ecosystem of Santorini, with its volcanic ash, humidity, and drought, but is also vulnerable to weather conditions. Despite its limited production, fava santorinis is a popular and expensive crop, with a high protein and fiber content. It has a long history in Greek cuisine, with evidence of its cultivation dating back to 6,000 BC.
