Sambucus peruviana is a tree species belonging to the Adoxaceae family, native to Central and South America. It can grow up to 8 meters tall with an irregular trunk and compound leaves with 7-9 leaflets. The inflorescences are long cymes with white fragrant flowers, and the fruits are black berries with 3-5 seeds. This tree is found in the Andes region, from Costa Rica to northwestern Argentina, at elevations between 2800 and 3900 meters. It is known by different names in different regions, such as "sauco" in Colombia, Peru, and Bolivia, "kiola" in Argentina, and "r'ayan" in the Quechua language. The fruits of Sambucus peruviana can be used to make jams, drinks, and wines, while the leaves, flowers, and fruits have medicinal properties such as being analgesic, anti-inflammatory, antiseptic, and sudorific. The wood of this tree is also hard and resistant, making it useful for construction, tools, and the making of quenas.
