Cucurbita argyrosperma, also known as cushaw squash or silver-seed gourd, is a winter squash species native to southern Mexico. It is primarily cultivated for its nutritional value, with its flowers, shoots, and fruits all being harvested. However, it is most commonly grown for its seeds, which are used in sauces. This species is part of the Eastern Agricultural Complex in the United States and is believed to have originated in Mesoamerica. It has a published reference genome from 2019. Cucurbita argyrosperma is classified into two subspecies and has various cultivars, including the Campeche squash and Japanese pie pumpkin. It is used as a food source, with the unripe fruits being consumed as vegetables and the seeds yielding an edible oil. It also has medicinal properties, with its seeds being used as a vermifuge and its flesh used to treat burns and promote lactation.
