Leaves and young stems are used as a leafy vegetable. It is cultivated and foraged in parts of Eurasia, consumed fresh, blanched, or cooked as a potherb; occasional use as an ornamental/edible with variegated or reddish foliage.
Food and beverages (non-medicinal):
Edible fresh or cooked as a vegetable; occasionally used in grain- and lentil-based dishes, soups, sautés, and pickles in regional cuisines. Flavor is mild to slightly salty; a mealy or gritty mouthfeel occurs in some accessions due to surface waxes, which can be reduced by blanching.
Properties relevant to use:
High leaf succulence with relatively low fiber contributes to rapid cooking. The leaf surface bears epicuticular crystals and bladder (epidermal) hairs that can give a mealy texture; water blanching and mechanical abrasion reduce this effect. Oxalate and nitrate levels vary among cultivars and growing conditions, which can influence processing choices.
