Atriplex halimus, also known as Mediterranean saltbush, is a species of fodder shrub in the Amaranthaceae family. It has small gray leaves and is similar in appearance to lamb's quarters. This plant is found in the Mediterranean Basin, North and East Africa, and the Arabian Peninsula. The leaves are a staple in the diet of the sand rat and are also edible for humans. Studies have shown that extracts from the leaves have significant hypoglycemic effects. A. halimus is often used in agriculture due to its ability to grow in harsh conditions and improve soil quality. In ancient times, it was known as maluaḥ in biblical Hebrew and was eaten by the poor people who returned from exile to build the Second Temple. The Greek poet Antiphanes also mentions foraging for this plant in dry riverbeds.
