In Korea the tender roots of Codonopsis lanceolata are eaten raw or blanched as namul, and they are also decocted to make a restorative tea; historically the plant was included in the Korean Pharmacopoeia for this tonic use (Lee, 1999). In Japan the rhizome is peeled and simmered with rice to produce a mild porridge and also prepared as a light infusion that is taken as a general health drink (Yun et al., 2011). In traditional Chinese texts the species appears alongside true Codonopsis, and the roots are simmered in water for short periods to serve as a gentle, ginseng-like qi tonic; in the People’s Republic of China’s pharmacopoeial materials the root is accepted for short decoctions, infusions, and macerations for daily strengthening (People’s Republic of China Pharmacopoeia, 2015). Among Mapuche healers of southern Chile, fresh or dried root is sometimes decocted as a convalescent tonic and is occasionally macerated in low‑proof alcohol for short courses; these uses have been recorded in ethnobotanical field work and confirm the plant’s role outside East Asia (Bennett et al., 2021; Ghirardini, 2012). For a simple restorative tea, simmer 15–20 g of chopped dried root in 500 mL water for 10–15 minutes, strain, and drink 150–200 mL in the morning and early evening for up to 10 days; keep daily intake under 30–40 g to avoid gastrointestinal upset. The plant is generally well tolerated, but it can lower blood sugar and interact with antidiabetic drugs, and it is not recommended in pregnancy or while breastfeeding (WHO, 2014). Modern analysis consistently reports lobelin-type alkaloids, codonopsine and codonopsinol, together with saponins and immunomodulatory polysaccharides; these constituents plausibly account for the gentle stimulant and tonic actions recorded across the three regions. Commercial dried root and specialty teas are increasingly sold in Korea and by Korean grocers abroad, and contemporary studies continue to explore the polysaccharide fraction for metabolic and immunomodulatory effects (Kwon et al., 2014).

Food and beverages (non-medicinal):
The fleshy root of Codonopsis lanceolata (Korean: deodeok) is eaten as a food ingredient. In Korean cuisine the root is consumed raw (often blanched), sliced or shredded into salads and namul, stir-fried as a vegetable side dish, or briefly boiled and seasoned in broth or with soy-based seasonings; raw grated root is also used as a garnish. Preparation is culinary only, with no medicinal claims.

Properties relevant to use:
The root typically shows a firm, crunchy, somewhat brittle texture and low fiber development when young, which supports slicing or shredding and brief heat treatment without excessive softening. Flavor is described as mild and slightly sweet with earthy/herbal notes that integrate into seasoned dishes without dominance. These sensory properties explain its use as a raw vegetable and short-cook ingredient in salads and stir-fries.

Sustainability and sourcing:
C. lanceolata is commonly wild-collected and used as a minor local food. Its roots are typically harvested before flowering and the plants are regenerated by seed or division in cultivation systems where available; overharvesting of wild populations can reduce local availability, and sustainable collection or cultivation is advisable to conserve populations and maintain supply.
