The corms (bulb-tubers) are used as a food starch source in parts of Mexico and Central America. They are traditionally soaked/boiled to remove acridity and processed into masa-like dough (nixtamalized in some traditions) for pinole and atole, or dried and ground into coarse flour for porridges and flatbreads. These preparations function as carbohydrate bases and thickeners; the plant is not used as a beverage ingredient.
Properties relevant to use:
The corms contain substantial starch with moderate amylose content typical of Iridaceae tubers, yielding a cooked texture that is cohesive when fresh and powdery when dried and milled. Rapid cooking or extended soaking reduces acrid flavor notes associated with raw tissue. Storage life of fresh corms is limited; drying and milling extend usability. No documented industrial-scale extraction protocols (wet-milling or starch isolation) have been standardized.
Sustainability and sourcing:
Wild populations are locally exploited for corms; sustainable practices emphasize harvesting mature corms only after seed set, or semi-cultivation with controlled bulbil planting to avoid depletion. Flowering plants are widely cultivated ornamentally and provide an alternative source of material for local food use when floral display is finished. No IUCN threat assessment is currently documented for the species; regional, in-situ conservation measures are recommended where wild harvesting occurs.
